Ingredients
- What you'll need:
- Coconut/Sunflower Oil
- 500g Chalmar Beef Fillet Strips
- Salt and Pepper
- 1 Red Pepper (sliced)
- Large Red Onion (sliced)
- Sugar Snaps (halved)
- 2cm piece of ginger (peeled and finely sliced)
- 3 Garlic Cloves (peeled and finely sliced)
- 40ml Hoisin Sauce
- 1 Tbsp Sesame Oil
- 1 Tbsp Soya Sauce
- 1 Tbsp Honey
- To Serve:
- Rice/Noodles
- Fresh Coriander and Basil
Instructions
- Method:
- Bring the fillet strips to room temperature and season with salt and pepper.
- Place a nonstick frying pan or wok on highest heat and, when it’s almost smoking, add a dash of oil and the fillet strips and quickly sear them on all sides.
- Remove the beef from the pan and set aside.
- Place the pan back on high heat, add a dash more oil, then add the red pepper and onion and fry for 2 minutes, tossing as you fry. Now add the sugar snaps and fry for 1 minute.
- Next add the garlic and ginger, followed by the hoisin sauce, sesame oil, soya sauce and honey and fry, turning often, until the sauce has reduced to a sticky coating. Turn off the heat, stir through the cooked fillet strips and serve over rice or noodles.
- Serve with fresh basil and coriander.
