Heat the oil in a heavy-based saucepan and sauté the onion gently for 3 minutes, stirring.
Add the garlic and sauté for 30 seconds. Add the CHALMAR BEEF CUBES and stir, until browned on all sides.
Add the carrot, potato and dried apricots.
Pour over the tomato puree and bone broth/water.
Bring to the boil, reduce the heat as low as possible and cover with lid.
Simmer gently for about 1 hour or until the meat is tender.
Add a little more broth/water if necessary and stir occasionally.
Cool slightly, then purée in a food processor, or place in a bowl and use a hand-blender.
