Chalmar Farm kitchen | PATTY MONSTER PITA

Inspiration for an exciting lunchbox is everywhere. These pita pockets filled with juicy mince patties take their cue from Sesame Street’s Muppet Monster, famous for his veracious appetite.

The Wethmar twins Raymond and Christof (soon to be 6) eagerly lend a hand to prepare their lunch boxes in Grandma Pat’s farm kitchen.

Why kids love it: They are thrilled with the surprise wrapped up in a surprise – each juicy patty is stuffed with a cheese cube which melts into gooey deliciousness.


  • 6 crackers, finely crushed
  • 30 ml Worcester sauce
  • 30 ml tomato sauce
  • 1 egg, slightly whisked
  • 6 Mozzarella cubes (+-1 cm x 1 cm)
  • Salt and pepper
  • Oil for brushing
  • 6 small whole wheat pitas
  • Salad leaves


Combine the CHALMAR MINCE, cracker crumbs Worcester sauce, tomato sauce, egg, and seasoning just until blended.

Form the mixture into 6 patties, small enough to fit in the pita, then press a cheese cube snugly into each patty.

Brush each patty with oil while you heat a griddle pan over high heat. Cook for 2-3 minute, then turn over and cook for another 2-3 minutes till done.

Make a slit on the side of the pita and stuff with the patty. Add salad leaves and just enough sauce that the pita bread doesn’t go all soggy in the lunch box.

Anja's Advice:

Chalmar’s 80:20 BEEF MINCE is ideal, as the higher fat content makes for a juicier patty.

Use LAMB MINCE and serve with Hummus, Greek style yogurt, tomatoes and onions.

For kid-friendly raw onion, rinse the slices in water or steep in hot water for a minute or so; otherwise mix spring onion with the yogurt.

For an even juicier patty: handle mince with a light touch, as over-handling will compact the meat.
