ROASTED CARROTS
WITH YOGURT & LIME DRESSING

Meet a veggie side dish that will steal the show. Bursting with delicious flavour, these roasted carrots with chilli and cumin yogurt dressing will become a favourite.

What you’ll love: Roasting carrots brings out the most incredible caramel flavours.

Ingredients:

  • For the roasted carrots:
  • 800 g Medium carrots, peeled and halved lengthwise
  • 30 ml Olive oil
  • 10 ml Mustard seeds + extra to sprinkle
  • Salt
  • Freshly ground black pepper
  • For the yogurt dressing:
  • 250 ml Full cream Greek yogurt
  • 10 ml Dried chilli flakes
  • 5 ml Cumin
  • Zest and juice of 1 lime

How to make:

Preheat the oven to 180’C.

Drizzle carrots with the olive oil and toss them with mustard seeds and season with salt and pepper. Arrange on a baking sheet. Bake for about 10-15 minutes, flipping halfway through.

Mix together the yogurt, chilli flakes, cumin, lime zest, and juice.

Arrange roasted carrots on plate and drizzle with yogurt dressing.

  • You can use Crème Fraiche instead of yogurt.
  • Basil pesto is great on roasted carrots.
