Ingredients
- What you'll need:
- 500g Chalmar Beef Trinchado Fillet
- 1 tablespoon olive oil
- 1 large onion (finely diced)
- 4 garlic cloves (minced)
- 1 tsp Peri Peri Spice
- 1 Tbs tomato paste
- 2 Tbsp Worcestershire Sauce
- 1 cup Beef stock
- 1 cup Red wine
- 2 Bay leaves
- 1 tsp Flour
- 1 tsp Sugar
- Chopped parsley to garnish
- Serve with:
- Rolls
- chips
Instructions
- Method:
- Bring the fillet to room temperature.
- Place a large nonstick pan on high heat and when it’s almost smoking-hot, add a dash of cooking oil and sear your fillet on all sides. Remove from the pan and set aside.
- Place a pan back on medium heat, add a dash more olive oil and the onions.
- Fry until softened, then add the garlic, peri peri spice, tomato paste, and Worcester sauce and fry for 1 minute.
- Pour in the beef stock and red wine ad 2 bay leaves and simmer for 5 minutes until slightly reduced.
- Dissolve the sugar and flour in 2 tablespoons of warm water and add.
- Simmer for a further minute until thickened.
- Turn off the heat.
- Add the fillet and stir to coat.
- Serve with crusty bread and a side of fries.
