When you live a gluten-free lifestyle, you’re always looking for ways to re-make your favourite dishes to fit your diet. Using almond flour is a great substitute for bread crumbs or flour. Almond flour coats easily, fries well and offer a much nicer nuttier flavour.

Ingredients
- For the smash:
- 480g frozen peas, thawed (or fresh hand-shelled peas and blanched)
- 80ml mint leaves, roughly chopped
- 100g plain feta cheese, crumbled
- Sea salt
- Black pepper
- Juice of 1 lemon
- For the Schnitzel:
- 4 Chalmar Beef rump schnitzels
- 2 eggs
- 100g almond flour
- 60ml parmesan grated
- 1 handful chopped parsley
- 5 ml lemon zest
- Sea salt
- Black pepper
- Butter for frying
Instructions
- Method:
- To make the smash:
- Place the peas in a large bowl and roughly mash with a potato masher.
- Add the mint, feta, seasoning and lemon juice.
- Toss to combine and set aside
- To make the schnitzel:
- In a small bowl, beat eggs with a fork until fully combined.
- In a second small bowl, mix the almond flour, parmesan, parsley, lemon zest and seasoning.
- Heat the frying pan on medium heat and add butter.
- Dip schnitzels into the egg mixture to ensure both sides are covered
.- Serve: Serve schnitzel with pea smash, extra mint and lemon wedges.
Notes

- Any leftover almond and herb crusted schnitzel are great for lunch boxes or chopped on a salad.
- Use desiccated coconut instead of almond flour for your schnitzel.
