Ingredients
- What you'll need:
- 1.5kg potatoes
- ½ Tbsp Salt
- 125g Chalmar Beef Dripping
Instructions
- Method:
- Peel the potatoes and cut into 5cm pieces.
- Bring a pot of salted water to the boil and add the potatoes. Once the water has come to the boil again, simmer for approximately 12 minutes, or until they’re just soft enough to you can insert a knife through the centre of each.
- Preheat the oven to 200°C.
- Drain the potatoes and allow to sit in the colander for 5 minutes for the residual moisture to steam off.
- Meanwhile, spoon the beef dripping into a large roasting tray and place in the oven for 5 minutes to melt and get scorching hot.
- Place the potatoes back into the pot, put the lid on and give the pot a really good shake, this will fluff up the edges and make them really crispy.
- Take the roasting tray out of the oven, and carefully drop the potatoes (away from you) into the tray.
- Turn all the potatoes to coat them in the beef dripping.
- Roast for 30 minutes then turn the potatoes, roast for a further 20 minutes and turn, and then roast for a final 20 minutes until golden and crisp.
- Serve immediately.
