Ingredients
- What you'll need:
- Chalmar Beef Denver Steaks
- Salt and Pepper
- 100g Tbsp Butter (at room temperature)
- 2 tsp fresh Thyme leaves (stalks removed)
- 2 tsp fresh Rosemary (stalks removed and finely chopped)
- To Serve:
- Roasted New Potatoes
- Asparagus
Instructions
- Method:
- Bring the steaks to room temperature.
- Mix the herbs and softened butter together in a bowl.
- Place a non-stick pan on high heat.
- Season the steaks with salt and pepper.
- You want the pan to be almost smoking-hot, so when you see a wisp of smoke, you’re ready to fry.
- Fry the steaks for 2 minutes on each side. (This is for medium-rare)
- Now turn the heat down and place a large dollop of herbed butter onto each steak, spreading it over the steak as it melts.
- Baste the steaks in the butter for 30 seconds.
- Turn off the heat, turn the steaks once more and add a dollop more butter to each.
- Swirl the steaks in the butter and baste them for a further 30 seconds.
- Total frying time should be about 6 minutes for medium rare.
- Place each steak on a plate and allow to rest for a few minutes before serving.
- Serve the steaks sliced or whole with potatoes and asparagus, and a good drizzle of the herb butter from the pan.
Notes
The Denver steak is relatively new cut, having only been introduced in the US in 2008. The Denver cut is located in the chuck area of the cow, more specifically in the shoulder area. The shoulder is usually associated with tougher cuts of beef, but the Denver portion is situated directly underneath the shoulder blade bone and doesn't get used much use so is deliciously tender and is one of the most flavourful cuts. For maximum tenderness, the Denver steak should be sliced across the grain after cooking. You also want to cook it at high heat and not beyond medium as it can toughen up if overcooked.
