Ingredients
- What you'll need:
- 2 Chalmar Racks of Lamb
- Lemon, Garlic and Herb Marinade:
- 6 cloves Garlic
- 1 Tbsp Fresh Rosemary (chopped)
- Zest of ½ Lemon
- 1/2 cup Olive Oil
- 30g Fresh Parsley
- Pinch Salt & Pepper
- To serve:
- Tzatziki, potatoes of your choice and a simple salad.
Instructions
- Method:
- Preheat your oven to 220˚C.
- Place the garlic, olive oil, parsley, rosemary, lemon zest, salt and pepper the into a food processor and blend.
- Place a nonstick pan on med-high heat and render the fat on the back of each of the racks until only a thin layer of fat remains.
- Place the two racks onto an oven tray and brush over half of the marinade and season with a dash more salt.
- Roast in the oven for approximately 16 minutes for medium rare, and 20 minutes for medium.
- Remove from the oven and allow to rest for 10 minutes.
- Meanwhile, take the remaining marinade and zap in the microwave for 30 seconds on high heat. This cooks the garlic and rosemary and softens the flavour.
- Slice the racks into individual chops and arrange on a platter.
- Drizzle over the remaining marinade and serve with tzatziki, potatoes, and a simple salad.
