Ingredients
- What you'll need:
- For the roasted carrots:
- 800 g Medium carrots, peeled and halved lengthwise
- 30 ml Olive oil
- 10 ml Mustard seeds + extra to sprinkle
- Salt
- Freshly ground black pepper
- For the yogurt dressing:
- 250 ml Full cream Greek yogurt
- 10 ml Dried chilli flakes
- 5 ml Cumin
- Zest and juice of 1 lime
Instructions
- How to make:
- Preheat the oven to 180’C.
- Drizzle carrots with the olive oil and toss them with mustard seeds and season with salt and pepper. Arrange on a baking sheet. Bake for about 10-15 minutes, flipping halfway through.
- Mix together the yogurt, chilli flakes, cumin, lime zest, and juice.
- Arrange roasted carrots on plate and drizzle with yogurt dressing.
Notes
Chalmar Farm Kitchen advice:
- You can use Crème Fraiche instead of yogurt.
- Basil pesto is great on roasted carrots.
