Isitambu/Umngqusho/samp and beans are traditional and delicious! It’s so quick and easy to make when using your pressure cooker.
There is no need to soak your samp and beans before the time and your meal is done in 1 hour and 15 minutes. This is one tasty stew!

Ingredients
- What you’ll need:
- 500 g CHALMAR BEEF meaty bones
- Sea salt and freshly ground black pepper
- 45 ml Oil
- 1 Onion, finely chopped
- 2 Garlic cloves, crushed
- 2-3 Baby marrows, halved and thinly sliced
- 3 Carrots, coarsely grated
- 1 Celery stalk with leaves, sliced
- 350 ml Samp
- 250 ml Speckled sugar beans
- 1 L Beef stock
- 1 x 400g Whole peeled tomatoes, chopped
- 15 ml Dried mixed herbs
- 20 ml Fresh parsley, chopped
Instructions
- Method:
- How to make the samp and beans with meat in a pressure cooker:
- Season the meat on both sides with salt and pepper. Heat 30ml oil in a pressure cooker, then brown the meat on both sides.
- Remove from the pressure cooker and set aside.
- Add some more oil to the pressure cooker and sauté all the vegetables until soft.
- Add samp, beans and beef stock. Return meat to the pressure cooker and stir.
- Cover with the lid on and lock into place. Set the timer to 1 hour on medium heat. Release the steam from the pressure cooker. Add tomatoes and seasoning. Simmer without a lid over low-medium temperature for 15 minutes.
- Serve with bread

Chalmar Farm Kitchen advice:
Prepare samp and beans without meat and serve as a side dish.
- If you don’t have a slow cooker: Separately soak your samp and beans in cold water overnight.
- Follow the recipe as above, but simmer over low heat for 2 – 2½ hours or until samp, beans and meat are tender in a pot.
