Ingredients
- What you'll need:
- 500g Chalmar Bavette Steak
- Steak Rub
- 8 Rolls
- Mayonnaise
- Chimichurri:
- 1/2 Red Onion (roughly diced)
- 60g Fresh Coriander
- 30g Fresh Italian Parsley
- 1 Red Chilli (Medium Heat)
- 1 cup Olive Oil
- 2 Tbsp White Wine Vinegar
- 1 tsp Sugar
- Pinch of Salt
Instructions
- Method:
- Bring the steak to room temperature. (You will either get 1, 500g steak in the packet or 2, 250g steaks in your order. The 2 smaller steaks will require less cooking time than the single large steak.)
- Using a fork, poke holes throughout the steak to tenderise it. Flip it over and do the same on the other side.
- Sprinkle over your favourite meat rub and massage it into the steak. Set aside.
- To make the chimichurri simply throw all the ingredients into a food processor and blitz until you have a smooth, but still textured sauce.
- Drizzle a little olive oil over your steak, then put a non-stick pan on high heat and when piping hot add your steak. Fry for 2-2 ½ minutes a side for rare-medium rare (For the smaller steaks on 1 ½ minutes a side)
- Remove from the pan and allow to rest. When slicing your steak ensure that you slice against the grain which ensures you don’t get stringy or chewy steak.
- Cut your rolls in half and toast them, then spread a little mayonnaise over each.
- Add slices of steak and top with chimichurri. Serve immediately.
