Ingredients
- What you'll need:
- 1kg Chalmar Beef Oxtail
- 1 Onion
- 5 cloves Garlic
- 3cm piece Ginger
- 2 sticks Celery
- ½ cup Hoisin Sauce
- ¼ cup Rice Wine vinegar
- Water
Instructions
- Method:
- Season the oxtail and brown in batches in a non-stick pan on high heat with a little sunflower oil.
- Transfer to a heavy based pot.
- Peel the onion, garlic and ginger, and blitz together with the celery in a food processor, or finely chop/grate.
- Add to the oxtail with the hoisin and vinegar as well as 500ml water.
- Stir to combine and place on medium heat, once it is simmering bring the heat right down to low.
- Place a sheet of baking paper between the pot and the lid to prevent moisture from escaping.
- Simmer for 2 hours, stirring occasionally.
- After 2 hours add 250ml water and cook for 30 minutes with the baking paper and lid on.
- Repeat this step, cooking for a further 30 minutes.
- Serve with jasmine rice and greens.
